Franck Pontais - Product Development

Franck has created a large number of products for the retail sector and world famous Food halls. He loves developing and elaborating with new products or ingredients and enjoys working with pioneers in the food industry.

Objective

Create a large selection of Charcuterie products including pates and cold meat using buffalo and pork. The full thought process is that this would have to be made on a large scale from a Kitchen production unit and sent to main food distributor/retailer.

Result

Some totally new recipes have been created to produce a selection of Charcuterie. A panel of food expert tested the food some of the products were analysed to find out DLC and other parameter for production purpose. A Clear document was establish with pictures, recipes and breakdown to allow the production team to carry on the work.

Franck created an extensive range of charcuterie products based on buffalo and pork meat for Jody Scheckter at Laverstoke Park Farm.

"Franck came and developed 15 different pates for Laverstoke, from Pork. When they were tested, at least 5 of them where the best we had ever tasted, and all of the others were very good. He also developed some buffalo pates which were just as tasty. What impressed me was the documentation, some of the most comprehensive I have seen. Thank you Franck."
